Roberto “Rob” Katindig’s journey through the culinary world began in his teenage years in Philadelphia, working at renowned establishments like Mikado Thai Pepper and Morimoto.

After traversing the West Coast in cities like San Francisco and Houston, honing his skills in diverse culinary environments, Katindig found himself back in York, Pennsylvania, opening Nama Sushi in Central Market, offering a fusion of East and West flavors.

The vibrant Nama Sushi stand has quickly become a local favorite, known for its intricately crafted sushi rolls and flavorful dishes like the Shaggy Dog Sushi Roll and Tonkotsu Ramen.

As Katindig’s business expands in York, another sushi contender emerges in Louisville, Kentucky, as Anh Le introduces Anko Sushi at The Streatery in the Beechmont neighborhood.

Le, a former general manager and sushi chef at Hiko-A-Mon, showcases his creativity with signature rolls like the Muhammad Ali and innovative dishes such as quail egg shooters and bluefish tuna belly.

Both Katindig and Le emphasize the importance of quality ingredients and unique presentations in their respective sushi establishments, drawing in crowds eager to experience their culinary creations.

While Katindig looks to grow Nama Sushi’s menu offerings and physical space in York, Le envisions expanding Anko Sushi into a larger standalone location in the future, highlighting their aspirations for culinary success in their communities.
