Axil Coffee Barista Wins Australian National Championship for the Second Consecutive Year
Melbourne-based barista Jack Simpson from Axil Coffee has secured the top position at the ASCA National Coffee Championships, marking his second consecutive victory.
Axil Coffee, based in Melbourne, has now clinched the championship for the third consecutive year, bringing their total wins to six since the event’s inception in 2006.
Simpson, emerging as the Australia Barista Champion, is set to represent the country at the forthcoming World Barista Championship scheduled to take place in South Korea in May.
In the previous year, Simpson achieved third place in the esteemed World Barista Championship, showcasing his exceptional talent on a global platform.
“It is a remarkable privilege to be named the 2024 Australian Barista Champion, and I extend my sincere gratitude for the constant support and training provided by Axil Coffee in crafting, designing, and researching these specialty coffee beverages,” Simpson expressed.
This year, Simpson’s performance included an espresso presentation, a milk-based coffee, and a coffee-based signature drink, each pivotal in the judging process.
For his innovative coffee-based signature drink, Simpson collaborated with bartender Sam Thornhill to create a unique beverage involving a rotary evaporator to extract peach juice, transforming it into honey and hydrosalt, which was then combined with konoto fermentation and served with a peach and marigold flower aroma cloud.
Simpson’s choice of Geisha and Pacamara coffees for his showcase further demonstrated his creativity and expertise in the field of barista artistry.
The forthcoming challenge for Simpson will be the World Barista Championship in South Korea, scheduled from 1st to 4th May 2024.
