University of Colorado Boulder Welcomes New Food Vendors for Football Season
The University of Colorado Boulder is set to kick off the 2024 football season with an exciting home game at Folsom Field. In conjunction with this event, the university has welcomed 13 new food truck vendors to cater to fans gathering outside the stadium.
Notably, over 60% of the vendors are minority-owned, showcasing a diverse culinary offering. Among the new vendors is Mississippi Boy Catfish and Ribs, owned by CU Denver alum Ty Allen, which is based in Denver’s Park Hill neighborhood. Allen’s business operates as a licensed nonprofit restaurant and performing arts center, and will feature a menu filled with classic soul food items such as red beans and rice, gumbo, yams, catfish, okra, pulled pork, and brisket.
Another notable vendor is Seoul Flava, which is owned by Candace Knight. She brings Korean recipes infused with soul food influences, reflecting the dishes she enjoyed while growing up. Knight expressed her excitement about showcasing her culinary heritage, stating, ‘It means a lot’ to share her flavors with attendees who may not find similar options in Boulder.
The Fan Fest Area on Duane Field will host these vendors, with operations commencing at 3 p.m., ahead of the kickoff for the CU-North Dakota State game, which is scheduled for 6 p.m.
