Brooki Bakehouse Debuts at Brisbane Airport
Brooki Bakehouse, a renowned Brisbane-based brand known for its signature cookies and brownies, is set to make its travel retail debut at Brisbane Airport‘s Domestic Terminal. The pop-up store will officially open tomorrow, 20 September, near gate 25, a location expected to attract numerous travelers, especially during the school holidays when an estimated 50,000 passengers pass through the terminal daily.
Brooke Bellamy, the founder of Brooki Bakehouse, shared her excitement about the venture, noting the strategic choice to open at the airport. “Many of our customers would mention dropping by our bakery to purchase gifts before air travel, so opening a store at the airport allows for convenient ‘grab and go’ purchases,” Bellamy stated.
The expansion is a significant step for Brooki Bakehouse, a brand that boasts over 4 million followers on social media and ships products globally, including to the United States, New Zealand, and various parts of Asia. Its cookbook has also enjoyed worldwide success, quickly becoming a bestseller in Australia and reaching the top 100 list in the US on Amazon.
Toby Innes, Head of Commercial Property Development at Brisbane Airport, expressed enthusiasm for welcoming Brooki Bakehouse. “We are delighted to host Brooki Bakehouse’s expansion, as it highlights the best of what Queensland offers while also contributing to local job creation,” Innes said.
The airport store will feature Brooki Bakehouse’s most popular treats, including freshly made cookies, brownies, and cupcakes. Additionally, the outlet will offer merchandise, which has gained popularity alongside their upcoming cookbook release.
This initiative forms part of the broader Future BNE development program, which includes over 150 projects and aims to transform Brisbane Airport as it prepares for the 2032 Summer Olympics and Paralympics.
