Historic Highland Hotel Launches New Fine-Dining Experience

Knipoch House Hotel, located on the outskirts of Oban, Scotland, has opened its new 1635 fine-dining restaurant, commemorating its rich history that intertwines with the tale of Macbeth. The venue, once the site of a historical murder, serves as the inspiration for this high-end culinary experience.

Amidst the autumnal golden hour, guests recently gathered at Knipoch House for the restaurant’s inaugural event. The dinner included a storytelling session recounting the turbulent history of the Thane of Cawdor’s murder, believed to have been an influence on William Shakespeare’s “Macbeth.” The grizzly past of the clan feud is embodied by a historical bullet mark still visible in the dining room wall.

Chef Andrew Engledow is at the helm of the new restaurant, showcasing Scotland’s rich produce through innovative cuisine. Guests were treated to a seven-course meal featuring dishes like Shetland scallops with artichoke and a soufflé revisiting the traditional cranachan. Engledow describes his approach to the menu as a personal take on the traditional Scottish kitchen, blending culinary heritage with modern techniques.

“By working with the best seasonal ingredients sourced from Argyll and beyond, my vision is to deliver a true taste of Scotland,” Engledow said, emphasizing the importance of local produce and supplier relationships.

The Knipoch House Hotel, operational under the family-run Sonas Collection group, has recently undergone a £1 million renovation. The historical charm is preserved while offering modern comforts, promising an ‘authentic Highland welcome’ to both the public and hotel guests.

Andreas Maszczyk, from the Sonas Collection, expressed enthusiasm for the new chapter of Knipoch House. “Knipoch House has always been a historic gem, and with this new restaurant, we’re beginning a new chapter in its legacy,” Maszczyk noted.

Visitors to Knipoch House can experience the seamless blend of history and cuisine while staying in the hotel set beside Loch Feochan, ensuring diners a complete Highland hospitality experience.
