NEW YORK, NY — Celebrity chef Bobby Flay has introduced a refreshing recipe for shrimp tostadas that are ideal for summer gatherings. Flay shared the recipe on his Instagram account, describing these bites as the perfect poolside treat.

To start, Flay cooks the shrimp in a flavorful Court Bouillon, a seasoned boiling water mixture with lemon, herbs, and spices. He notes that while using fresh shrimp enhances the flavor, pre-cooked shrimp can significantly reduce cooking time.

After cooking, Flay combines the shrimp with thinly-sliced cherry tomatoes, scallions, cilantro, lime juice, and chipotle puree to create a zesty shrimp salad. While this mix rests, he prepares a spicy mayo using mayonnaise, lime, and chipotle puree, which he suggests can also be used on burgers.

Flay then cuts flour tortillas into smaller circles and fries them in avocado or vegetable oil until crispy and golden brown. “That’s the key here,” he says about achieving the perfect tostada base.

For assembly, he spreads a layer of chipotle mayo on each tostada, followed by a generous scoop of shrimp salad. The chef garnishes the dish with a cilantro leaf, a drizzle of avocado oil, and a sprinkle of lime zest to complete the appetizer.
