Bobby Flay Shares Comforting High-Protein Dinner Recipe and New Cookware Line
Celebrity chef Bobby Flay has recently shared a comforting and high-protein dinner recipe that is perfect for a cozy weekend evening. In a segment on Today Food, Flay showcased his Porterhouse Pork Chops and Polenta dish, a recipe featured in his new book, Bobby Flay: Chapter One. This dish is inspired by the classic Italian Osso Buco, but instead of using veal, Flay opts for pork chops. The recipe involves a homemade spice rub made with cumin, coriander, mustard, salt, and pepper, which is applied to the pork chops just before cooking to create an aromatic crust. The pork chops are then seared in avocado oil and finished in the oven to ensure they are cooked through while retaining a vibrant crust.
The dish is served with a prepared polenta swirled with romesco sauce, a tomato-based sauce made with peppers, almonds, and garlic. Additional toppings include Parmigiano Reggiano cheese, the brothy pan sauce from the pork, and a herbaceous gremolata. Today co-host Dylan Dreyer praised the dish, calling it ‘amazing’ and highlighting its comforting and fulfilling qualities.
In addition to his culinary creations, Bobby Flay has also collaborated with GreenPan to launch a new line of professional ceramic nonstick cookware. This collection, known as the Bobby Flay by GreenPan Professional Ceramic Nonstick series, features Thermolon, a PFAS-free nonstick coating. The cookware is designed for quick and even heating on all stovetops, including induction, and is oven safe up to 392°F. Flay emphasized the importance of using safe and durable cookware, stating that ‘what you cook on matters’.
This new cookware line aligns with Flay’s commitment to making cooking at home both fun and worry-free, ensuring that home cooks can achieve incredible results with reliable and healthy cooking tools.
