Los Dos Potrillos Set to Open in Denver on April 15

DENVER, Colo. — Los Dos Potrillos, a popular Mexican restaurant chain, will open its first location in Denver on April 15. The announcement was made on Wednesday, signaling a significant expansion for the Ramirez Hospitality Group, which has operated in Colorado since 2002.

The new restaurant, situated at 4100 E Mexico Ave., Ste G, spans 8,000 square feet and is located near the busy intersection of I-25 and Colorado Boulevard. With a team of 100 employees hired for the site, the establishment aims to deliver its renowned Mexican cuisine to Denver’s dining scene.

“We’ve always wanted to bring Los Dos Potrillos to Denver, and we couldn’t be more excited to share our food and family traditions while building an incredible new community at Colorado Boulevard,” said Daniel Ramirez, CEO of Los Dos Potrillos. “Everything we serve comes from the heart, and we can’t wait to welcome our Denver neighbors into the family.”

This expansion arrives despite recent challenges faced by the company. In February, a different location, Los Dos Potrillos Cocina y Cantina in Northglenn, closed after just a year in operation due to difficulties with its fast-casual format. Ramirez stated at the time that the smaller venue did not adequately support the dining experience they aspire to offer.

“When we are at 200-plus seats, we can do our best work at giving great service and providing exceptional value to all of our customers,” Ramirez explained in a February email. As the Denver location anticipates seating around 200 guests, it aligns with that vision.

The grand opening on April 15 will kick off with a ribbon-cutting ceremony at 11 a.m., inviting locals to experience the vibrant flavors that have made Los Dos Potrillos a beloved choice among diners along the Front Range. The chain now boasts a total of five eateries and a craft brewery.
