Stella McCartney Shares Speedy and Nutritious Vegan Puff Pastry Recipe
Renowned vegan cookbook author Stella McCartney has shared a vibrant and easy dish to beat the winter blues. McCartney, daughter of famed musician Sir Paul McCartney, has come up with a quick and nutritious recipe using frozen puff pastry as the base. With no need for thawing, the vegan puff pastry is layered with delicious toppings and baked to perfection.
In her new cookbook, McCartney wanted to create a recipe that would inspire with its bright and colorful appearance. The result is a crisp golden pastry topped with wilted spinach, sweet peas, and red onions, flavored with fresh lemon zest. This flavorful dish is bursting with color and taste.
To recreate this recipe, you’ll need a 13.2-ounce sheet of refrigerated vegan puff pastry, such as Jus-Rol. You’ll also need unsweetened plant-based milk, olive oil, red onion, balsamic vinegar, fine sea salt, fresh baby spinach, garlic clove, freshly ground black pepper, frozen peas, and fresh lemon zest and juice.
Start by preheating the oven to 375°. Roll out the pastry sheet onto a large baking sheet, leaving the parchment paper from the package underneath. Fold over the edges to create a border for holding in the filling. Brush a mixture of plant-based milk and olive oil over the base and edges of the pastry.
Arrange thinly sliced red onions over the pastry, slightly overlapping them. Drizzle with balsamic vinegar and olive oil, then sprinkle with salt. Bake in the preheated oven until the pastry is crispy and golden, which should take around 25 to 30 minutes.
While the tart is baking, heat olive oil in a medium skillet and cook the baby spinach and garlic until wilted and softened. Season with salt and pepper, then drain any excess liquid. Once the tart is done, remove it from the oven and lay the wilted spinach over the onions. Scatter the thawed peas on top, and sprinkle with lemon zest and juice. The vegan puff pastry tart is now ready to be sliced and served.
