ST. LOUIS PARK, Minn. — The beloved Chi-Chi’s restaurant is set to make a return after a 20-year hiatus, with its grand reopening scheduled for October 6, 2025. The revitalized location will be situated at 1602 West End Blvd., replacing McDermott’s Rojo Mexican Grill at the Shops at West End.

Fans of the original Chi-Chi’s have expressed their enthusiasm, sharing memories of enjoying classic dishes like chimichangas and fried ice cream. Michael McDermott, son of Chi-Chi’s co-founder Marno McDermott, is leading the new venture, which promises a mix of nostalgic favorites and contemporary menu items.

“We’re bringing back the food, energy, and fun that people love, now with a fresh twist for a whole new generation,” McDermott said. Menu highlights will include seafood enchiladas, burrito bowls, and new taco options, designed to cater to modern tastes while keeping cherished classics.

Regular patrons like Marcus Parkansky, who fondly remembers family visits to Chi-Chi’s, plan to relive those experiences. “I was super excited when I heard it was coming back because I have a lot of memories there,” he said. Other fans are looking forward to the return of favorites such as the fajita sizzle plate and taco salad, with assurances that fried ice cream will also be on the menu.

“It brings me back to childhood and those fun memories and discovering this exciting food,” said Rachael Crew, a nostalgic advocate for the restaurant’s return. As for the restaurant’s atmosphere, fans hope the vibrant, kitschy decor will remain a part of the new Chi-Chi’s experience.
